1. Peppersi, original creation
Strong, sweet, cold, minty, bubbly, cola-forward, tequilla, pinkies out!
1 1/2 - 2 oz peppermint schnapps
1 1/2 - 2 oz white tequila
1 can (355 ml/12 oz) Pepsi
Pour the schnapps and tequila into a pint glass over light ice, then pour the full can's worth of Pepsi into the glass, taking care to preserve the carbonation. Stir gently and enjoy!
If you want less alcohol, then drink slower! Just kidding, you may reduce either or both liquors to no less than 1 oz, though I strongly reccomend that you use 2 oz of both for the best flavour.
I reccomend Casamigos Blanco as its neutral and mildly sweet agave flavour works best for Peppersi. This is defenitely a "less is more" situation, so avoid tequila with intense flavour. Do not use mezcal or barrel aged tequila for this reason.
I have only tried this with MacGuinnes Peppermint Schnapps and can attest to it being perfectly fine. Feel free to experiment with your peppermint schnapps, just make sure it's on the sweeter side.
Do not use any cola except original full-sugar Pepsi, not only does Peppercoke sound ridiculous but no other cola tastes right. Pepsi has a very distinct flavour that Coke and its imitators make no attempt to replicate. I reccomend cans for convenience but bottled Pepsi is fine as long as you accurately measure it and ensure it's not gone flat as full carbonation is essential.
If you can get your hands on a contemporary bottle of Crystal Pepsi, I highly reccomend that you use it instead. I had the privelage of that once and it was worth it.
I do not reccomend incorporating fresh mint for anything except garnish. Muddled mint ruins the flavour for me and makes it taste like peppermint tea, but it's up to you.
